Not on the topic of books.

I am looking for a Red Velvet cake recipe. It is my daughter's birthday today and I want to bake a lactose-free Red Velvet cake that is NOT dry and icky. Last year the Red Velvet cake was a giant FAIL. It looked awesome but tasted bleh.

  1. The only lactose-free recipes I have are also gluten-free... :(

  2. I can't personally vouch for this one since I'm no cook, but this might be a starting point:

  3. Thanks Val. That is very close to the one I found. But I think I messed up. I used vinegar to make the soy-buttermilk substitute instead of lemon juice. ew. I'm concerned. Well, we'll see...

  4. No! It should be ok, if you didn't use too much vinegar! We used to use vinegar on milk (in my pre-lactose intolerance days) all the time to sour milk for cakes.

  5. oh good. I thought I used vinegar in the past, but then I saw that the recipe called for lemon juice and I panicked a little. My daughter can have the eggs and the cocoa, but the milk makes her stomach weird. I ran down and tasted the batter and it's okay.

She made me use purple dye instead of red, though. It's very very purple.

  6. I want to see a picture of the purple velvet cake! Love purple. My mom had to make me a purple angel food cake with purple divinity frosting one year. It was a bit unfortunate - looked all too much like a bruise...

And I've used lemon juice before - give me vinegar any day. It's actually more neutral tasting.
